What is Extra Virgin Olive Oil?

Extra virgin olive oil (EVOO) is the highest grade and most premium quality of olive oil. It's extracted directly from olives using mechanical methods, like pressing or centrifugation, without any chemical treatments or excessive heat. This method ensures the oil retains its natural flavor, aroma, antioxidants, and nutrients.

EVOO is characterized by its low acidity (below 0.8%), superior taste, and distinct aroma. It often boasts a balance of fruity, bitter, and peppery notes, making it ideal for both cooking and finishing dishes. Due to its minimal processing and high-quality standards, extra virgin olive oil is revered for its health benefits and culinary versatility.

To be certified Extra Virgin in California an olive oil must first pass a chemical analysis which tests for free acidity, peroxide value, and UV absorbance, followed by the sensory analysis- a blind tasting to check for defects and minimum fruitiness through an organization like the California Olive Oil Council (COOC).
